Elderberryflower Sirup  

can be used to make some liqueur or jelly. First of all let me tell you the recipe for the basic ingredient - the juice.

Recipe for Elderberryflower Juice

Dissolve 35 grams Ascorbic Acid (which you can buy as powder at a pharmacy) in 1 litre mineral water (carbonized). Place 15 Elderberry Flower Heads (the flowers really really open) into the water mixture and leave overnight (at least 12 to 15 hours but not longer, the juice will be too strong). Then drain through a clean linen towel and your juice is ready to be transformed into a wonderful liquer or jelly. If you want to preserve it as juice you will have to add some sugar to your liking, boil it and then fill it into bottles with tight-fitting lids. Will not keep for too long so will have to be drunk soon.

Recipe for Elderberryflower Liqueur
Heat the above elderberry juice with 700 grams sugar until the sugar has dissolved. Doesn't necessarily have to boil to do that. Then measure the amount of juice you've got and add the same amount of 32 to 38% white rum (or clear Korn) to the mixture. Please let it cool down for a bit before you mix in the alcohol. Fill it into nice bottles, close them tightly and let them rest for about 4 months at a cool and dark place. You can then add as much as you like to a glass of prosecco or champagne. Makes a nice aperetif.


Recipe for Elderberryflower Jelly

Again take the juice and add sugar with added jellying ingredient depending on the manufactures description. I use the one where you only need half the sugar so I have more of the elderberry flavour. You can also add 1 kg sugar to 750ml juice (if you don't like any manufactured jelly sugar) and boil it. Then just test about every 5 minutes whether the mixture does start to jellify. As soon as it does fill it into jars, close them and turn them upside down for 5 minutes to prevent the jelly from spoiling.




Holunderblütensaft

35 gr Ascorbinsäure (gibts in der Apotheke als Pulver) in 1 Liter Mineralwasser (mit Kohlensäure) auflösen und 15 Holunderblütendolden (schon ganz aufgeblühte) hineinlegen. 12 bis 15 Stunden ziehen lassen (nicht länger sonst wird er zu intensiv). Dann durch ein Leinentuch sieben.


Rezept für Holunderblüten Likör

700 gr Zucker in obengenanntem Saft bei mittlerer Hitze auflösen. Etwas abkühlen lassen  und mit der gleichen Menge 32-38% Korn oder weißem Rum auffüllen. In schöne Flaschen füllen, gut verschließen und ca. 4 Monate kühl und trocken lagern. Dann ein wenig davon (eben soviel wie es dem eigenen Geschmack entspricht) zu Sekt oder Champagner geben und als Aperitif genießen. 


Rezept für Holunderblüten Gelee
Man nimmt den Holunderblütensaft und gibt die vom Hersteller angegebene Menge Gelierzucker dazu. Ich persönliche nehme gerne den 2:1 Zucker weil ich finde, dass dann der Geschmack der Blüten intensiver ist. Normalerweise kocht man den Saft mit dem Gelierzucker auf und läßt es (je nach Angabe des Herstellers) ca. 1 Minute kochen. Man kann aber genausogut auf 750 ml Saft 1kg Zucker nehmen, den Saft mit dem Zucker aufkochen und dann ca. alle 5 Minuten eine Gelierprobe machen. Danach in saubere Gläser abfüllen, dicht schließen und für 5 Minuten auf den Deckel stellen. Dann wieder umdrehen und abkühlen lassen.
